Just got my new consignment of Dorset Naga chillis and a mystery mixed bag. I've identified a few. See if you can work any out:

Spreading the love (via eBay)

I was so chuffed with my homemade FSM model I thought I'd spread the love by selling kits to make the same on eBay :)
I won't post the link here in case I get accused of spamming. Just search eBay UK if interested.

Re: Hot Sauce and Chili Pepper Heads thread

My Dorset Naga plant is just starting to get flower buds on it. I couldn't wait that long, as I promosed to make a blisteringly hot curry for people at work here, so I ordered some fresh ones online :-)

Re: How to Make Giant Ravioli...(Tasty)

There's a Rick Stein recipe for Lobster ravioli with basil and spinach which is probably the best thing ever. Can't find a link for it teh interwebs though :-( I think it's in this book: http://www.amazon.co.uk/Rick-Steins-Taste-Sea-Stein/dp/0563371609/ref=sr_1_21?ie=UTF8&s=books&qid=1216817...

And there's also a chopped-vs.-crushed debate; apparently chopping garlic rather than crushing it gives a more delicate flavor. . . Why would you want a more delicate flavour!! Garlic rules. I've got one of these: http://www.garlictwist.co.uk/ Makes mincing garlic easy, and no fiddly bits to wash. ...

Re: Favorite Thai Dish?

I have made red paste before, but it's quite a lot of effort to get good, fresh ingredients (without having an oriental supermarket nearby) and to make the paste by hand (pestle and mortar) which makes the best paste. If you're going to scrimp on that then you may as well get a good quality premade ...

Re: Favorite Thai Dish?

My favorite pad thai recipe: http://www.bbcgoodfood.com/recipes/4397/pad-thai Otherwise, just a good red thai curry paste from an oriental supermaket, meat, veg, and coconut mik for a simple red curry. Oh, and salted duck eggs. A very VERY aquired taste, but worth it: 1) Dissolve salt in warm water ...
