Re: The Video Games Thread

Ugh, just glancing at the pixilated graphics for that gave me heartburn.

Re: The Video Games Thread

I've never really been a big fan of chess. My reason is that the level of determinism (for both openings and closings) built into the nature of the pieces and the small size of the board tends to elevate memorization over improvization at high enough skill levels (or powerful enough computers) for t...

I really love the train-inspired pieces at 5:25, 24:30 and 31:15. Simply AWESOME.

Re: What are you EATING right now?

Not at all Punster, keep the recipes coming. I have about 30 ducks that are bordering on "ready" and the numbers is still growing. Do you have any bright ideas for duck? Thankx. I've only rarely made duck ... it's a tad luxurious to cook for just myself, and my wife thinks they're too cut...

Re: The Video Games Thread

BTW, if anyone feels the urge to dip a toe back into WoW, and lacks a guild, my friend and I are sole proprietors of a formerly large guild whose membership has dwindled back down to just the two of us. Plenty of perks and banked gear. Nice to be able to upgrade to all max-sized bags when creating n...

Re: What are you DRINKNG right now?

Plus I've had a couple really good white wines before. Might want to learn why, or which ones they were. Or were they good because I had all that beer in me... ? We'll never know. Back when I was still homebrewing and able to regularly enjoy alcohol, I used to keep tasting notes ... you know those ...

Re: What are you EATING right now?

Arrgh, you buggers are too sophisticated for me. Between working two jobs half the time and taking care of 22 animals and a domestically inactive wife at home, I h'ain't got near enough time to do much more than make a sammich. Maybe if that blasted lottery check ever shows up I'll be able to try s...

Re: What are you DRINKNG right now?

Guinness Draft, in a 1/5L hefty glass stein. I've got a pair of full yard glass (and a half dozen half-yards) in my garage loft collecting dust ... trust me that you have NEVER seen a truly amazing Guinness nitro-cascade until you've seen 3 pints dumped all at once into a full size yard, and churn l...

Re: What are you EATING right now?

Chowmein: Speaking of braised pork, daikon and star anise, here's one of my old recipes (this is sort of rustic japanese) ... conceptually, it should be star anise friendly, so I'd start with 2-3 lobes. Pork Belly w/Winter Melon, Daikon & Leek Origins: My own recipe, fusing a southern ingredient...

Re: What are you EATING right now?

That sounds good , very good , i'll try what you done did after i get the braised beef with asian 5 spice correct. My first try was awful , the second most recent attempt wasn't quite right , too much cinnamon , not enough star anise , and some daikon ( turnip is close enough ) was needed. I did na...

Re: What are you DRINKNG right now?

It's not as hard as you think, and can be fun. Most women enjoy, for example, being asked that their taste preferences are in wine. When in doubt, an inexpensive cava or proseco is nearly always a fairly safe popular bet, and goes with almost everything for only $11-16/btl, USD. I can refine suggest...

Re: What are you DRINKNG right now?

Professional winemakers have LOTS more tools than homebrewers when it comes to winemaking, because you can do things like precisely stop a fermentation exactly where/when you want to with things like thermal shocking, sterile filtration, centrifugal yeast removal, yadda yadda. Homebrewers cant do th...

Re: What are you DRINKNG right now?

I was wondering Roving Punster if you ever made sparkling wines. I once came across a riesling that continued to ferment in the bottle - it didn't win any awards for its good looks but it sure tasted mighty fine. I guess that is similar to how Prosecco came about too. Like Yahoo Serious, some of us...

Re: What are you DRINKNG right now?

BTW, I agree with your bias against overuse of Oak, which I've always found to be one of the signature mistakes of winemakers lacking solid high quality professional training. When buying Chardonnay for example, I always lean heavily towards steel vat varieties, which are not only less expensive, bu...

Re: What are you DRINKNG right now?

Swimmingly well said on all counts, albeit with 1 tiny quibble: Riesling is the only white variety with this worthy characteristic – all other white wines are meant to be consumed before the following vintage. As with all rules and generalizations, there are always exceptions ... including in this i...
