Contraire, my dear Mary. The use of the word 'is' was in no way superfluous. In fact, it was meant to correct the grammar and make the answer more closely resemble a complete thought.

Well, if the student merely wished to show courage, they could say any of a varying bucketful of insulting lines about the professor's wife. The idea was to make a well-thought out, true, and simple statement, and if 'This' is not grammatically a sentence, then why not trade the slightest bit of simplicity for the knowledge that the answer would be easily understood? And should the student have left 'is' out of the statement, the grammatical incorrectness and vagueness of the answer may have taken away from the meaning enough so that it would be lost on the professor and the student would have received a grade of zero, and their courage ignored to boot.
P.S.: I like 'to boot'. It's a good phrase.
