Gnocchi IS NOT potatoe and flour, it is potatoe, EGG and flour (with, if you want, a pinch of nutmeg).
Boil potatoes in Jacket
Add equal volume of flour and an egg (plus PINCH of nutmeg) and some salt
Mix up into a dough
Knead for at least 10 minutes
Role out into snakes. Cut into small pieces. PINCH each piece so it is thinner in the middle compared to edges.
Leave for at least one hour at RT.
Boil until they float (a few minutes or even less).
Serve with your favourite sauce.
