Roasted butternut squash soup.
1 butternut squash
2 medium carrots
2 medium red onions
2 red peppers
4 garlic cloves
1 chilli pepper
(and whatever odds & ends of vegetables you have in the fridge...)
vegetable stock
olive oil
single cream or creme fraiche
Quarter the onions. Cut all the rest of the vegetables so that they aren't any bigger than the onions. Cut the chilli in half (and scrape the seeds out if you're a wimp), crush and skin the garlic. Stick them all in a tray with some olive oil and roast them in the oven for 40 minutes (or until the edges start to go black). If you are a booze-hound, adding a bit of vermouth enhances the flavour at this stage.
Put the vegetables in a pot, cover with water and stock and bring to the boil. Attack it remorselessly with a blender until it is smooth. Simmer for 15 - 20 minutes. For some reason, this soup is improved by being frozen and then defrosted. Don't ask me why. Add a little cream or creme fraiche before serving.

Japanese-ish noodle soup
Okay it's a soup, but it's all a full meal in itself.
Ingredients:
Stock: 1 sheet konbu seaweed (available at any oriental supermarket and most larger normal supermarkets)
8 cups water
A small handful dried mushrooms
A big splash or two of Soy sauce
Optional: 1 chicken stock cube
PLUS
If you have it: Bonito fish flakes
Other ingredients:
Cooked noodles
A protein source - chicken, fish, seafood sticks or tofu are all good
Vegetables - green ones are good. Seaweed also good
Spring onions (scallions)
Put all your stock ingredients in a big pan. Bring to the boil then reduce the heat and simmer for 20 minutes.
Remove the sheet of konbu.
To serve
Into your stock put your cooked noodles, protein and vegetables. Sprinkle over the spring onions
Serve in a big bowl.
Experiment with this - find the ingredients you like.

i was at a cafe, and they had a soup called, Buffalo style chicken soup. think of cream of spinach soup. then think of buffalo wing... this was like CREAM OF BUFFALO WING SOUP! it was genious. i don't know how to make it, but my guess is this
-Chicken broth
-Cream or source
-Lots of Buffalo wing sauce, and other hot sauce
-Onions
-Carrots
-leeks
-any other vegetables that you think would work well in this...
after the everything is cooked, add the cream and Buffalo sauce... serve hot.
