I actually have a flensing knife. It's a nasty bit of work, a two-handed hooked blade on a three-foot handle, with the sharp edge on the inside of the hook and extending a good foot or more up along the handle. Similar to this, only the sharp edge is on the inside. It seems there are quite a few different types.
